Can You Freeze Bread Dough? Where the General Advice Stops Applying

Yeast, water, gluten, and leftover fermentation capacity are structural. Iowa State, following Fleischmann’s Yeast, still points home bakers toward freezer formulas that are high in yeast and sugar and low in salt and fat. Fleischmann’s Master Bread Dough sits in the middle: 14 grams of yeast, milk, and 2 tablespoons of butter on 5½ to 6½ cups of flour, about 1.9% yeast and 4% fat on Iowa State’s 120-gram cup. The home line “low fat, high sugar” and the plant line “add 3 to 8% fat and cut the water” answer different jobs. A 1972 freezer roll is trying to keep a sweet, high-yeast dough alive in a slow home freezer. A plant is trying to limit free water. Neither license applies to a rich dough already overproofed when it went into the bag.

Should you freeze bread dough after the first rise or after the second?

Freeze it after the first rise, shaped, with fermentation still in reserve. How do you freeze yeast dough so it still rises after thawing?
